Sweet squash pie

Hi,

I share with you today this little seasonal recipe! In this autumn weekend and in the heart of the Halloween party! The squash is often used for the famous pumpkin soup or for other savory dishes, but we forget that we can prepare it in sweet!

I love it and I add a little bit of cinnamon according to my taste. Quick and easy recipe!

List of ingredients

Shortcrust pastry

  • 100 gr of butter
  • 80 gr of sugar
  • 1 tsp (teaspoon) salt
  • 1 pcs Egg
  • 300 gr flour

squash mass

  • 800 gr of squash PN (net weight after cooking).
  • 1 pcs Egg
  • 100 gr. of 15% cream
  • 60 gr sugar
  • 1 tsp (teaspoon) salt
  • juice of half a lemon
  • 1 tsp fresh (grated) or ground ginger .
  • 30 gr of flour

Preparation steps

Shortcrust pastry

  1. Mix the flour and salt in a dish with the sugar.
  2. Add the butter then incorporate it into the flour by kneading quickly and lightly with your fingertips. You should obtain a sort of coarse meal in 2 or 3 minutes.
  3. Quickly stir in milk or water. Very little is needed to allow the dough to bind and form a ball. Milk or water? It depends on your taste.
  4. To roll out without problems, roll out the dough on baking paper and bake as is in the pan.

Squash mass

  1. Cook the squash and drain well, then whisk it in a bowl.
  2. Add all other ingredients. Pour over the rolled out and pricked dough.
  3. Bake at 220°C for about 30 minutes, control cooking.

The extra tip

It is important to let the squash drain and dry a little after cooking in water, so that it does not soggy the shortcrust pastry base.

It is possible to buy a dough already made and just make the mass.

Preferably use a round dish of 30 cm. Approximately.

It is important to preheat the oven.
