Nutritional Profile – Flemish Beef Stew – 💪
🥩 Swiss beef stew — 200g
Beef is the protein backbone of this dish: with 42g of protein per serving, it alone covers more than 75% of an active adult’s daily protein needs. As a result, it provides long-lasting satiety and supports muscle mass. The stew cut, naturally lean (less than 3g of fat per 200g), remains very low in fat compared to other slow-cooked meats. Furthermore, slow-cooking in beer preserves the meat’s tenderness while intensifying its flavors.
🍝 Tagliatelle — 60 g (dry)
The tagliatelle provides the carbohydrate base of the dish, with 42g of complex carbohydrates per serving, a source of sustained energy. In addition, they provide 7.6g of plant-based protein, which complements the protein in the beef. However, since this dish is already quite substantial, a 60g dry serving (about 150g cooked) makes for a well-balanced side dish without overloading the plate.
🍺 Dark beer — 85g
Dark beer plays a key role in the flavor profile of carbonade: it adds malty notes and a slight bitterness that balance the sweetness of the gingerbread. Nutritionally speaking, 85g of beer contains only 36 kcal, as the alcohol evaporates almost entirely during cooking. This is why it can be considered a flavor enhancer with a negligible caloric impact in the final dish.
🍞 Gingerbread — 25g
Gingerbread is the traditional thickener used in Flemish beef stew: it naturally thickens the sauce while giving it its characteristic sweet-spicy notes. It contributes 101 calories and 15 grams of carbohydrates per serving—a significant amount, but one justified by the culinary role it plays. Furthermore, its moderate glycemic index is balanced by the dish’s overall high protein and fiber content.
🥕 Parsnip — 60g
Parsnips add a mild, rich flavor to the simmered sauce, with a slightly higher carbohydrate content (7.3 g) than carrots. They are a particularly good source of fiber (1.3 g per 60 g), which enhances the dish’s texture and aids digestion. Furthermore, their slightly sweet, anise-like flavor harmoniously complements the bitterness of the dark beer.
🥕 Carrot — 30g
Carrots add color, a mild sweetness, and fiber (0.8 g per 30 g) to the filling. Combined with parsnips and onions, they form a classic aromatic base that enriches the nutritional profile with micronutrients (particularly beta-carotene) without increasing the calorie count.
🍎 Granny Smith apple — 20g
The apple adds a subtle tartness that balances the rich, full-bodied flavors of the sauce. However, its nutritional value is modest at 20g (11 calories, 2.3g of carbohydrates); its role is primarily to enhance the flavor—it accentuates the typical sweet-and-sour fruitiness of the carbonade.
🫙 Gingerbread + Mustard — binding condiments
Whole-grain mustard (7 g) and ketchup (10 g) add aromatic complexity and a mild tang to the sauce, respectively. Their combined caloric content is 20 kcal; however, they contribute to the dish’s total sodium content (about 0.6 g combined), which should be taken into account when calculating the overall sodium intake.
