Nutritional Profile – Three-Tomato Risotto – 🩵🌱

🌾 Risotto rice (Arborio, dry) — 100g

Arborio rice forms the main structure of the dish and is its primary source of carbohydrates: 78 grams of complex carbohydrates per serving, providing long-lasting energy. That’s why this risotto is a complete meal on its own, ideal for an active lunch or a satisfying dinner. However, the risotto technique—gradual cooking as the broth is absorbed—gives it a creamy texture without requiring large amounts of fat. As a result, the fat content remains very moderate despite the dish’s perceived creaminess.

🍅 Cherry tomatoes — 60g

Cherry tomatoes add freshness, acidity, and color as a finishing touch, with just 13 kcal per 60g. They provide 0.7g of fiber and antioxidants, particularly lycopene, whose bioavailability increases when cooked. In addition, their natural juice blends into the sauce and reduces the need for broth, making the dish easier to digest.

🍅 Tomato paste — 30g

Tomato paste is the flavor driver in risotto: it adds umami intensity and a vibrant color for just 23 kcal. Plus, it packs 0.84 g of fiber and 1.35 g of plant-based protein into just 30 g. That’s why it’s a natural flavor enhancer—and a much better nutritional choice than store-bought sauce.

🍅 Dried tomato — 10 g

Dried tomatoes are the most flavor- and nutrient-dense ingredient in the tomato trio: 21 kcal, 2.17 g of fiber, and 1.13 g of protein per just 10 g. As a result, even a small amount is enough to significantly enhance a dish’s flavor and nutritional profile. On the other hand, they are also the saltiest of the three forms (0.53 g of salt per 10 g), which is why you should adjust the amount of salt added during cooking.

🧈 Butter — 5g & 🧀 Grana Padano — 5g

The "mantecatura"—the final addition of butter and Grana Padano—is the secret to the risotto’s creamy texture. Together, these two ingredients account for 57 kcal, 5.7 g of fat, and 4.1 g of saturated fat per serving. When used in controlled amounts (5 g each), they add richness and umami without throwing off the overall nutritional balance. In addition, Grana Padano contributes 1.5 g of protein and a significant amount of calcium.

🍷 Rosé wine — 35g

Rosé wine is added at the start of cooking to deglaze the pan: the alcohol evaporates completely, leaving only the fruity aromas and natural acidity, which enhance the rice’s flavors. Its residual calorie content is 25 kcal, primarily in the form of residual carbohydrates (0.7 g). That is why it can be enjoyed without hesitation, even by those who avoid alcohol.

🧅 Red onion — 20 g

Red onions add a slightly sweet, aromatic base and a beautiful pinkish color to the soffritto. Per 20 g, they contain 8 kcal and 0.4 g of prebiotic fiber. In addition, their sulfur compounds and flavonoids contribute to the dish’s antioxidant profile.

🌿 Basil — 2 g

Fresh basil adds a touch of freshness and Mediterranean aromas to the dish, without adding any measurable calories. In particular, it contributes volatile essential oils and a green note that contrasts with the concentrated flavors of the tomatoes.

Product Description: A vegetarian risotto rich in complex carbohydrates (92 g per serving) and low in fat (2.2 g per 100 g)—ideal for replenishing energy reserves with a delicious, low-fat meal.
