  • 4 cod fillets
  • Zest and juice of one orange
  • 2 tablespoons sugar

  • 2 tablespoons sunflower oil
  • Salt and pepper to taste
  • 2 tablespoons sake (optional)
  • 2 tablespoons light miso paste (available in Japanese grocery stores)
  • 2 tablespoons sugar

For the broccoli rice:

  • 1 head broccoli, cut into small florets
  • 2 tablespoons olive oil
  • 1 onion, thinly sliced
  • 2 garlic cloves, minced
  • 1/4 teaspoon chili flakes (or more to taste)
  • 1 teaspoon salt
  • Black pepper, to taste
  • Grated Grana (or Parmesan), for sprinkling

For Chinese noodles :

  • 200g Chinese noodles

Instructions :

Preparation of Cod with Orange and Miso :

The combination of fresh citrus and the umami depth of miso makes this dish an unforgettable sensory experience.

  • In a bowl, mix the orange zest and juice with the sugar.
  • Melt the butter in the sunflower oil in a frying pan over medium heat.
  • Add the orange-sugar mixture, and sake if using, and simmer for a few minutes.
  • Stir in miso paste and sugar until smooth.
  • Season the cod fillets with salt and pepper, then add them to the pan.
  • Cook for 4 to 5 minutes on each side, until the fish is cooked and lightly browned.
Preparation of Broccoli Rice :

Broccoli is used here to create a healthy and delicious alternative to traditional rice.

  • Heat the olive oil in a large frying pan over medium heat.
  • Add the minced onion and minced garlic, and sauté for 2 minutes.
  • Add the broccoli florets and chili flakes, then season with salt and pepper.
  • Sauté for about 5 minutes, until the broccoli is tender but still crunchy.
Preparing Chinese noodles :

Chinese noodles add a deliciously tender texture to this dish.

  • Bring water to the boil in a saucepan and cook the noodles according to package instructions.
  • Drain the cooked noodles and rinse in cold water.

Assembly and Decoration :

Now it's time for the presentation!

  • Arrange a portion of broccoli rice on each plate.
  • Add the cod fillets with orange and miso on the side.
  • Sprinkle grated Grana over the broccoli rice for an extra touch of flavour.
