Nutritional Profile – Pork Tenderloin with Chimichurri Sauce
🥩 Roasted pork tenderloin — 150 g
Pork tenderloin is the centerpiece of this dish: it provides the satiety and protein density needed to make a complete meal. With 43.95 g of protein per serving, it alone covers nearly 80% of an active adult’s daily protein needs. Furthermore, its fat content remains moderate (6 g per serving), making it one of the leanest cuts of pork available. That’s why it fits easily into a balanced diet, even when eaten regularly.
🫙 Whole heavy cream — 60 g
Heavy cream is the key ingredient that gives the creamy chimichurri sauce its texture: it binds the herbs and spices together and provides the dish’s characteristic creaminess. It contributes 200 kcal per serving, primarily through its fat content (20.88 g), a significant portion of which is saturated fat. As such, it is the ingredient that has the greatest impact on the dish’s overall fat profile. However, using a reduced-fat cream with 15% fat would significantly lower this fat content while maintaining the texture.
🍝 Dry tagliatelle — 60 g (dry weight)
Tagliatelle provides the carbohydrate base of the dish and ensures long-lasting satiety thanks to its 42.3 g of complex carbohydrates per serving. It also provides 7.56 g of plant-based protein and 3.06 g of fiber, contributing to overall nutritional balance. Furthermore, their glycemic index remains moderate when cooked al dente, which helps limit postprandial blood sugar spikes. It is the ingredient with the highest calorie content relative to its dry weight.
🥦 Broccoli — 80 g
Broccoli adds lightness and nutritional density to this dish: just 24.8 kcal per 80 g, with 2.4 g of fiber and 2.4 g of plant-based protein. In particular, it is a valuable source of vitamin C and sulfur-containing compounds, which are well-documented for their role in a balanced diet. It also helps increase the portion’s volume and satiety without adding to the calorie count. Furthermore, its al dente texture in this dish better preserves its micronutrients than prolonged cooking would.
🥓 Smoked bacon bits — 15 g
When used in small amounts, bacon bits play a key role in adding flavor to chimichurri sauce: they provide a smoky, umami note that enhances the overall taste. Their calorie content is relatively low (48.3 kcal). They round out the sauce’s protein profile while adding character.
🧅 Red onion — 15 g
The red onion adds flavor and texture to the sauce, with just 5.85 kcal per 15 g. It provides a modest amount of fiber (0.27 g) and natural carbohydrates (1.05 g). Notably, gently sautéing it in olive oil at the beginning of the recipe brings out its natural sugars and mellowing its sharpness. It is thus a flavor enhancer that is virtually calorie-neutral.
🫒 Olive oil — 5 g
Olive oil is used in minimal quantities (5 g) for cooking, which limits its caloric impact to 40.5 kcal. It nevertheless provides monounsaturated fatty acids, which are recognized for their role in a balanced Mediterranean diet. Furthermore, it helps carry the flavors of the herbs in the chimichurri sauce. Its proportion remains reasonable in this dish, which derives most of its fat from the cream.
