Nutritional Profile – Provençal Vegetable Stew – 🥦
🍅 Tomatoes — 200g
Tomatoes make up the bulk of the tian and give it its melt-in-your-mouth texture and slightly tangy flavor. With only 42 kcal per 200g, they account for more than a third of the dish’s total weight while remaining extremely light. They also provide most of the dish’s fiber (2.4g), helping to promote satiety. This is why tomatoes are the central ingredient in this dish, both in terms of flavor and nutrition.
🟢 Zucchini (yellow + green) — 160g
The two varieties of zucchini together weigh 160g, making them the second-largest component by weight in the tian. Their high water content (>95%) makes them very low in calories: only 30 kcal per 160g. As a result, they contribute to the dish’s tender texture after cooking, while also being easily digestible. They also provide 1.6g of fiber, enhancing the dish’s satiating effect.
🍆 Eggplant — 80g
Eggplant plays a key role in the tian, absorbing the Provençal flavors as it cooks. In particular, it provides 1.92 g of fiber for just 18 kcal, making it the ingredient with the highest fiber content per calorie in the dish. However, its ability to absorb fat during cooking is limited here by the very small amount of olive oil used in this recipe. That is why the dish remains very low in fat despite the presence of eggplant.
🧅 Red onion — 80g
The red onion adds aromatic depth and a slightly sweet note to the tian. With 31 kcal per 80g, it is the ingredient with the highest calorie content per gram among the vegetables in the dish, due to its carbohydrate content (5.6g). It also contributes to the dish’s high content of prebiotic fiber, which supports a healthy balance of gut microbiota. When used in moderation, it is perfectly compatible with a very low-calorie dish.
Description: Very low in calories, rich in vegetables, and a good source of fiber—ideal for a light yet filling meal.
